Son of Max, Steven is the managing director at Castle Estate. Steven is head of operations at the Abattoir and oversees the daily operations of Castle Estate in partnership with his wife Rachel. Steve is passionate about the transparency of the supply chain and the ability of farmers to control the destination of their product and its value.

So, without further ado our product of the week is none other than the infamous porterhouse steak! Also known as Sirloin Steak, our organic and grass-fed porterhouse makes the perfect steak to indulge in. Coming from an area of the animal where the muscles do less work (the piece of beef between the rump and the ribs), the porterhouse is tender and flavourful and well suited to pan-frying and barbecuing or stir-frying when thinly sliced.
