Slaughter and Boning Services

There is no better way to experience the taste of your own home grown produce, than with Castle Estate’s customised slaughter and boning services.  Whether you are just wanting to fill your own freezer, share produce with friends and family, or market your own produce, we have a solution for you.  Castle Estate processes Australia’s widest range of species including Beef, Lamb, Pork, Goat, Llama/Alpaca, Venison, Buffalo and Wild Game Venison, Kangaroo and Rabbits.

Did you know that having your animals processed at Castle Estates fully accredited abattoirs allows you to on-sell your produce?  Many of our customers do this in the form of Farmers Markets or Home Deliveries.

Castle Estate can work with you to help facilitate the branding, marketing and distribution of your product.  This can included your own logo, pricing and packing options.

Castle Estates cold chain partners can enable delivery of your produce across Victoria and interstate.

Livestock Receival

Live animals are to be delivered to Castle Estate between the hours of 11:00am and 3:00pm on the day prior to the scheduled day of slaughter.  Animals will not be received outside of these times without prior arrangement.

All animals delivered must be accompanied with the appropriate vendor declaration (NVD/ Pig Pass) and the animals must be fitted with a recognized NLIS ear tag or branded in the case of pigs.

Castle Estate has the ability to accept animals in trailers and trucks.

Animals will not be received if they have not been booked in prior.

Animal Welfare

Castle Estate is committed to the highest levels of animal welfare.  All animals are kept in undercover yards with access to fresh drinking water on the night prior to slaughter.  Access to pasture paddocks is available in the event that an animal is required to be onsite longer than 24 hours.

Carcass Hanging

Castle Estate will attempt to satisfy any extended carcass time hanging requests as long as they are within the relevant food safety guidelines. The general hanging times for carcasses are;

Beef / Buffalo 7 to 10 days

Lamb / Pigs / Venison / Goats – 5 to 7 days

Special requests for longer or shorter hanging times will need to be discussed with Castle Estate prior to slaughter.

Packaging

All cuts (excluding bones, sausages and patties), are prepared in cryovac packaging and state of the art Thermoform packaging to extend the shelf life of the product, maintain freshness and improves freezing protection and the quality of the product when it is defrosted.  All meat is labelled with product name, pack date and weight, it is supplied to you in cardboard carry boxes at the time of collection.

Delivery

Delivery of your finished product is available as part of Castle Estate’s scheduled deliveries into Melbourne Metro, Regional Victoria and Interstate locations. Delivery Fees Apply.

Smallgoods

Castle Estates onsite smoke house can turn your pork into great selection of Ham, Bacon and other smallgood products. You can elect to have parts of your pork processed for smallgoods on your cut selection sheet.

Castle Estate is a fully accredited abattoir (Lic: L00133) which operates Monday to Friday alongside our team of butchers and packers in our boning room.

    FAQs

    How do I prepare to bring an animal to the Castle Estate operation?

    • Animals are not to be delivered to our site without a booking. You must ring the office between the hours of 9:00am and 4:00pm Monday to Friday to arrange a booking.
    • All animals are to be delivered to Koallah Farm between 7:00am and 3:00pm on the day prior to the scheduled day of slaughter. Animals will not be received outside of these times without prior arrangement.
    • All Cattle must be accompanied with a National Vendor Declaration (NVD) form and NLIS ear tag.
    • National Vendor Declaration (NVD) forms can be emailed to info@castleestate.com.au but will need to ensure this is done prior to delivery of the animal.
    • We will not accept delivery of your animal if you have not provided your paperwork and your animal is not fitted with an NLIS ear tag.

    How long are products aged or hung for?

    All product is hung for a minimum of 5 days and up to 10 days dependant on available processing and packing capacity, we believe this allows a reasonable time for the product to form in a way that is most conducive to the highest quality product.

    Do you offer a service for smoking products?

    Yes, we have recently installed a brand new Smoke House at Castle Estate, which we use to create unique smoking combinations for our own product through the Providore, as well as produce for you a high quality service for your own pork products such as ham or bacon as part of service processing.

    How are products packaged & labelled?

    • All beef cuts (excluding bones and sausages) are provided in vacuum packaging to maintain freshness, improve protection when freezing and maintain the quality any defrosted product. All meat is labelled with product name, pack date and weight, and placed in cardboard carry boxes for collection.
    • If as part of your business operation you wish to resell your product, Castle Estate can label product with your own logo/details, order picking and compilation is also provided to a number of 3rd party customers. This needs to be pre-arranged directly with the Castle Estate team prior to your animal delivery.

    When and how can I pay for my service or product?

    All product is to be paid for at the time of pick up (cash, credit card) or prior to collection via EFT. On-line orders are paid for via the Shopping Cart process within the Providore.
