THAI BEEF SALAD
Ingredients
Marinade
450g rump steak (or other steak of choice)
3 tablespoons soy sauce
2 cloves garlic crushed
2 tablespoons lime juice
Salad
lettuce leaves
1/3 cup mint leaves
1/3 cup basil leaves
1/4 cup coriander leaves
1 cucumber, sliced
Dressing
2 red chilles, chopped
3 tablespoons soy sauce
2 tablespoons lime juice
2 teaspoons palm sugar
2 kaffir lime leaves, shredded
Method
Place steak, soy sauce, garlic and lime juice in a bowl and allow to stand for 10 minutes.
Cook steak on a preheated hot char grill for 1-2 minutes on each side or until cooked to your liking. Cover steak and set aside to rest.
Arrange lettuce, mint, basil, coriander and cucumber on serving plates. Slice beef thinly against the grain and place on top of salad.
To make dressing, combine chillies, soy sauce, lime juice, palm sugar and lime leaves.
Pour dressing over salad and serve.
