Meet Tanya Ghosn (nee Castle).
Hi, I am Tanya. Castle Estate is my home, and to this day after over 100 years of family farming, my young children will now be the 7th generation to be introduced as custodians of this special place. My memories and experiences on Castle Estate have shaped who I am today:
- Through seeing my grandmother milking cows on a milking stool in the old diary;
- riding my tricycle around the path at the old farm house, watching carefully for the Tiger Snakes from a young age
- putting out hay on the back of the tractor with both my grandfather and father, with cows running along behind eager to get what they thought would be the best bit
- a vast vegetable garden full of fresh produce, and an orchard just over the fence with the crispest apples that you will ever taste
- nothing went to waste, my grandmother had a traditional meat safe in her pantry, containing cold cuts and other leftovers, no visitor ever went hungry.
Our home was heated by the wood stove in the kitchen, which was the centre of the family and the source of many an interesting dish lovingly prepared by Mum, everything from beef and lamb through to other local produce such as duck and rabbit which Dad had bought home. We would try anything…..From this upbringing, for me it has always been about the source of the food, the whole food and the whole animal. Of utmost importance is the way that it has grazed, the freshness and what overall consumption of naturally produced produce means for your health – both physically and mentally.
Personally, my passion is cooking with the best ingredients for my family, I have studied Wholefood Cooking, and I like nothing more that experimenting with different recipes and meal options. The importance of this for you is that I am the one “reading the labels” on your produce requirements, and ensuring that our practices and those of any farmers product that we provide meet my strict standards – which I trust will be the best for you as well!
