<p>Who doesn’t love the classic lamb chop? As one of our favourites we wanted to share this recipe with you. If you have the time, marinade in the fridge overnight for a mediterranean flavour.</p>

<p>Recipe: Place lamb chops in a single layer on a baking tray, scatter over with thyme and garlic, season with salt and pepper then drizzle with olive oil and rub seasonings into both sides of the chops. Cover and refrigerate to marinate (3 hours-overnight).</p>



<p>Preheat a barbecue or grill pan over medium-high heat. Add chops, cook to your liking, turning occasionally (4-5 minutes each side for medium-rare), set aside in a warm place to rest.</p>



<p>Bring a large saucepan of salted water to the boil over high heat, add spinach and cook until bright green (2 minutes), drain and cool under cold running water. Squeeze to remove excess water, place in a serving dish, season to taste, crumble over feta, drizzle generously with extra-virgin olive oil and serve with lemon wedges and your lamb chops.<br>If you have any great tips on how to prep your bone broth please share with us!</p>

<p>Prime cuts of kangaroo meat for human consumption have rolled off the production line in Victoria for the first time. See what it means for this abattoir owner.</p>



<p>VICTORIA’S first batch of locally-grown kangaroo meat for human consumption rolled off Camperdown’s Castle Estate abattoir’s processing line on Monday.</p>

<p>Until now the state’s only registered abattoir to process culled kangaroos was forced to bring in carcasses from interstate.</p>



<p>But as<em>&nbsp;The Weekly Times</em>&nbsp;reported last month, the Government has&nbsp;<a href="https://www.weeklytimesnow.com.au/news/victoria/victorian-kangaroo-meat-on-the-menu-in-2021/news-story/1605186573c13c8f70aff45cda14fb06" target="_blank" rel="noreferrer noopener">lifted the ban&nbsp;</a>on the state’s roos being processed for human consumption and look for opportunities to export skins.</p>



<p>“The changes to how products generated from the kangaroo harvesting program can be used gives more options to harvesters and processors to make use of these animals and reduce waste — and create more jobs in country towns,” Victorian Agriculture Minister Mary-Anne Thomas said.</p>



<p>Steven Castle, who owns the Camperdown plant, said the decision meant he could now source all his kangaroo carcasses from Victoria’s registered harvesters.</p>



<p>“(We) don’t anticipate bringing roos in from outside Victoria (from here on),” Mr Castle said. “I’ll be branding it as Victorian Harvested Kangaroo.”</p>



<p>The shift to processing Victorian roos for human consumption not only delivers a clean, lean source of protein at a time of record beef prices, it adds value to a meat that until now could only be used for pet food.</p>



<p>Last year shooters earned $1.25/kg (dressed weight) for roos, averaging 25kg, to pet food processors, with consumers paying $6-$7/kg for the minced meat.</p>



<p>In contrast prime kangaroo for human consumption ranges from $12/kg for mince, through to $22/kg for steaks.</p>



<p>Only trained professional shooters authorised through the harvesting program, who meet strict health and safety measures, are able to supply kangaroos to abattoirs for human consumption.</p>



<p>Harvesters must abide by the national code of practice for the humane shooting of kangaroos and wallabies for commercial purposes.</p>



<p>Their vehicles and cool rooms must also be accredited through PrimeSafe.</p>



<p>Since October 2019, 86 harvesters and five meat processors have taken part in the pet-food-only program, with many calling for changes that allow processing for human consumption to support jobs in country communities.</p>

<p>VICTORIA’S kangaroo population has surged by 40 per cent since 2018, to almost 2 million today, prompting the Andrews Government to lift this year’s harvesting quota to 95,680.</p>



<p>The 2021 quota is well up on last year’s 57,900, which up until now only allowed kangaroos to be processed for pet food.</p>



<p>But as&nbsp;<em><a href="https://www.weeklytimesnow.com.au/news/victoria/victorian-kangaroo-meat-on-the-menu-in-2021/news-story/1605186573c13c8f70aff45cda14fb06" target="_blank" rel="noreferrer noopener">The Weekly Times</a></em>&nbsp;<a href="https://www.weeklytimesnow.com.au/news/victoria/victorian-kangaroo-meat-on-the-menu-in-2021/news-story/1605186573c13c8f70aff45cda14fb06" target="_blank" rel="noreferrer noopener">reported</a>&nbsp;last month, the Government has decided to lift the ban on the state’s roos being processed for human consumption and look for opportunities to export skins.</p>

<p>Professional shooter Glenn Cole said he was delighted by the lift in quota, given last year’s quota put more than $1.25 million in harvesters pockets.</p>



<p>“Now we know what we’re doing and can get on with the job,” Mr Cole said.</p>



<p>It’s welcome news to Camperdown game meat processor Steven Castle, who for the first time can start processing Victorian roos for human consumption, rather than bringing in carcasses from interstate.</p>

<p>His company Castle Estate runs the only abattoir in Victoria that is registered to process kangaroos for human consumption and he intends to now focus on locally-sourced meat.</p>



<p>“We’ll start processing in coming weeks and don’t anticipate bringing roos in from outside Victoria (from here on),” Mr Castle said. “I’ll be branding it as Victorian Harvested Kangaroo.”</p>



<p>The shift to processing Victorian roos for human consumption not only delivers a clean, lean source of protein at a time of record beef prices, it adds value to a meat that up until now could only be used for pet food.</p>



<p>Last year shooters earned $1.25/kg (dressed weight) for roos, averaging 25kg, to pet food processors, with consumers paying $6-$7/kg for the minced meat.</p>



<p>In contrast prime kangaroo for human consumption ranges from $12/kg for mince, through to $22/kg for steaks.</p>

<p>So what does it mean to have a healthy gut? Pro-biotics and pre-biotics are key to maintaining a healthy gut and we can ingest them in our foods and in additional supplements also. One of the popular foods that has come into the spotlight for gut health is bone broth.&nbsp;</p>



<p>Bone broth is made using both meaty joints and bones. It is simmered for hours to enable the protein, vitamins and minerals and collagen to infuse into the liquid. It can be consumed like sipping tea or used as a base for soups as you like.</p>

<p>Many people sip bone broth or begin making it at home, because they’ve heard that it may support digestion, fortify the immune system, or help reverse visible signs of aging. And while bone broth is an excellent source of collagen and a nutritious foods, its specific benefits are less clear.</p>



<p><strong>Bone broth is rich in a protein called gelatin</strong>, made from dissolved collagen. Collagen is found in connective tissue. While the amount of protein will vary depending on volume of water used, types of bones and length of cooking, most bone broth contains about 10 grams of protein per 8-oz serving.</p>



<p><strong>It’s also rich in the amino acids like glycine and proline</strong>. Glycine is an important neurotransmitter that has anti-inflammatory properties and supports the immune system (1). Proline, along with other key nutrients like vitamin C, helps to support healthy joint health and collagen production (2).</p>



<p><strong>Bone broth contains B vitamins like niacin and riboflavin</strong>, both of which play a role in metabolism. They also help your body break down carbohydrates, proteins and fats to produce energy. (3,4)</p>



<p><strong>Bone broth is rich in glucosamine and chondroitin</strong>, two nutrients that help support joint health. (5)</p>



<p><strong>Bone broth contains trace amounts of minerals</strong>, but, despite popular claims, it is not a good source of calcium, phosphorus or other minerals.</p>

<p>A Lake Purumbete abattoir has been awarded the first Victorian licence to process kangaroo meat for sale for human consumption.</p>



<p>Castle Estate&#8217;s works, near Camperdown, already processes venison and rabbit, as well as kangaroo from interstate suppliers, alongside cattle, sheep and pigs.</p>

<p>This year&#8217;s state government Kangaroo Harvesting Program will include meat for human consumption, with a quota of 95,680 kangaroos, an increase of 37,780 from last year.</p>



<p>Castle managing director Steve Castle said it was a natural progression, given so many animals were being harvested for pet food.</p>



<p>&#8220;Other parts of the country have also been harvesting kangaroo for human consumption for quite some time,&#8221; Mr Castle said.</p>



<p>&#8220;It is a similar production method to the deer.</p>



<p>&#8220;Obviously the kangaroo is a lot smaller than the Sambar venison that we have already been doing, but it is not a difficult change from a processing point of view.&#8221;</p>



<p>He said he&#8217;d made inquiries to see if the government was considering allowing the sale of kangaroo meat for human consumption.</p>



<p>&#8220;It was already in process, they were already in the stages of working towards this.&#8221;</p>



<p>Mr Castle said the numbers he was processing were low, at the moment.</p>



<p>&#8216;We are talking in the hundreds, not thousands, but it gives us the opportunity to continue to establish that market,&#8221; he said.</p>



<p>Castle sold kangaroo meat directly to consumers, through home delivery, and the hospitality trade.</p>



<p>&#8220;Kangaroo has been used in hospitality for quite a while now, so there is already somewhat of an established trade.</p>



<p>&#8220;There are more and more consumers out there, who are willing to give these sorts of proteins a go.&#8221;</p>



<p>Kangaroos would be supplied by registered field harvesters, with a strong focus on animal welfare and hygiene.</p>



<p>&#8220;Food safety and animal welfare are the two key components of the supply chain,&#8221; Mr Castle said.</p>



<p>&#8220;I am not suggesting it will ever be like beef or lamb, but slowly and surely there is a market there.</p>



<p>&#8220;If we can get it to market, at a competitive rate, there will be an appetite there for it.</p>



<p>&#8220;When you are a small business, you have to have lots of different avenues and revenue streams; this compliments some of our other offerings.&#8221;</p>

<p>Castle Estate is the only abattoir in Victoria cultivating kangaroo meat for human consumption, under a new license allocated by the Andrews Labor Government, connecting Victorians with the delicious, lean meat.&nbsp;</p>



<p>After almost 120,000 kangaroos were culled in 2020 (for the production of pet food or inhumanely left to rot in paddocks), the Castle Estate family has made a foray into another realm of farming for 2021. With Food Safety as a top priority the facilities at Castle Estate are perfect to ensure that the highest standards are met to enable the meat fit for human consumption.&nbsp; Castle Estate enforce the guidelines working with professional hunters and licenced field harvesters to enable this to come to market.</p>



<p>Ethical, natural and sustainable farming is in the Castle Family’s blood. Unwavering advocates for human farming practices, Castle Estate is the only Abattoir to have been awarded the licence to process Kangaroo as part of this program in Victoria.</p>



<p>All harvesters looking to supply kangaroos for human consumption, must be registered and certified under the Victorian Kangaroo Harvesting Program and the relevant Primesafe Licensing. In a bid to celebrate and humanely harvest the animal, Castle Estate is embracing the kangaroo in a 100% wild, organic, grass-fed way of farming.&nbsp;</p>

<p>Castle Estate is now the conduit for healthy, high-quality kangaroo meat to land on Australian families’ tables. The nutritional value ofkangaroo meat has less than 2% fat, making it a healthier alternative to other red meat counterparts.&nbsp;</p>

<p>We are happy to announce that Castle Estate’s Abattoir has been awarded the exclusive licence here in Victoria to supply Kangaroo meat direct from farm to the public. The Victoria Government has announced a cull of over populated Kangaroo&#8217;s which are destroying farmers crops. Each cull the Kangaroo meat is usually either sent to pet food suppliers or left in paddocks, however this year the Victorian Government initiative that will see an increase in availability of Kangaroo meat for human consumption. </p>
